I cannot wait to try the brew that is in their fermenter now, “Your Wish is Granted”. Wheat beer, lime zest, holy moley, they’ve done it again.

Mellow and it definitely packs an appropriate coffee punch. I’ve also bought the coffee beans and brewed it up. Like coffee? “World’s Columbian Coffee Exposition” uses locally roasted coffee beans to get their terrific coffee flavors. “Milkstachio” – need I say more? If you’ve had it, I think you’ll agree that it sets the bar high in the milk stout category. I’m thinking summer, boating, chilling for this one.

Their “Watch for Falling Coconuts”, is a very cool and refreshing libation, with clear notes of coconut and tropical fruits. Let’s all put this beer on the board, and support them to keep it flowing. “Hop Butchers”, formerly “South Loop”, has lit up the score board at US Cellular with its “Good Ryes Wear Black”. They will get four stars once they get to that point, for sure. That’s why only one star for both of those categories. After all, the more you know about what’s in your glass and how those flavors got there, the more you’ll enjoy drinking it. We do like to highlight one specific variety of hop from time to time, but more often than not you’ll find us utilizing our own combinations and blends or working with one of our hop suppliers to test out a new, experimental hop.

In his poem titled “Chicago,” Carl Sandburg refers to this great city of Chicago first as “Hog Butcher For the World.” And while the literal meaning behind that moniker has faded since the mid-twentieth century closing of the Union Stock Yards, it anchors and inspires our new identity in three meaningful ways:įirst, we’re big fans of the full spectrum of hop flavors and aromas. “Hog Butcher For The World, Tool Maker, Stacker of Wheat, Player with Railroads and the Nation’s Freight Handler Stormy, husky, brawling, City of the Big Shoulders.”
